For general tablet usage, M1 is more than capable. 8 gb ram is overkill for iPads in my opinion. The newer iPads mostly have the same everything as the M1 but a newer chipset. If you have a M1 iPad Air with decent enough storage, it's a great machine even today and even after a year or two !
